How to Cut Fresh Oregano
When you can get it, fresh oregano will work great in any dish that calls for dried oregano or marjoram, but with a fresher and all around better flavor.

Make sure your oregano is clean and free of soil.

Remove leaves from the sprigs. Oregano stem is usually tough and mostly flavorless, so let's get rid of it. By grasping the top of the stem and pulling pinched fingers along it, you can quickly strip the lower leaves. Then pick the top leaves individually.

Gather the leaves and run through them with a rough slice.

With your dominant hand on the tip of the knife handle and the opposite hand perched on the back of the blade tip, rock the knife back and forth. With practice, you'll be able to rock the knife back and forth very quickly. As you rock the blade, waddle it back and forth through the pile of sliced oregano, stopping frequently to scrape the pile back together. Continue until you're satisfied with the results.
