How to cook
Choose a ripe pineapple and use a larger and sharp chef's knife.
Cut off the top of the pineapple where the leaves are - also called the crown.
Working in 1 inch strips around the pineapple trying to preserve the fruit, trim off the tough skin with the knife.
Cut off the bottom and remove any sharp eyes that are leftover by cutting triangles into the flesh.
Cut the pineapple in half twice so that you have 4 equal pieces.
Position the pieces upright and cut off the tough core from the middle of each piece.
Lay the pieces on the flat edge you created by removing the core and cut 2 times across lengthwise and then chop perpendicularly to create bite sized pieces.
