How to Roast Butternut Squash

There are more elegant ways to prepare a butternut squash, but it doesn't get much easier than this. Roasted squash keeps well. Make a puree or use it in a sauce or as baby food.

Preheat oven to 425°F

Slice off about 1/2" from the stem tip and the opposite end.

Slice the squash in half lengthwise. Butternut squash is tough, so it takes some force to split it opened. But once your knife gets going, it slices fast. Use a heavy knife and keep your fingers out of the way.

Scoop out the seeds with your largest spoon.

Place the halves on a parchment-lined baking dish with a rim. The parchment will save you from having to scrub the baking dish. The rim will save you from having to scrub your oven..

Roast for about 45 minutes, or until the squash is easily pierced with little resistance at its thickest portion.

Using that same large spoon, you can now scoop out the soft flesh.
