How to Shave Fennel

Most fresh fennel bulbs will come with fronds and stem attached. Remove and discard this portion of the vegetable. You can put the whole bunch in a stock if you like. Or, the frond makes a great garnish. It looks like dill and has an intense anise flavor.

Fennel bulbs are stored without their roots, so they'll usually have some brown areas on the surface and at the region where the roots were removed. Slice a little from the root area, then peel away the outer layer if it's too brown.

Slice the bulb in half from stem to root. Then slice those halves in half from stem to tip so you end up with 4 wedges.

Use a mandolin slicer to shave the wedges as thin as possible. The mandolin slicer is probably the most dangerous tool in the kitchen. Wear multiple layers of latex gloves if you're not comfortable with this. Use your palm as much as possible to keep your fingers out of the way. A miniature slicer is much safer if you can find one. Use immediately, or store shaved fennel in olive oil or cold water to keep it from browning.
