Choose a cauliflower that is firm and the florets are tightly packed close together. Reject any heads that show signs of softness. Avoid pre-cut cauliflower because it will go bad more quickly.

If the cauliflower came already wrapped in plastic like this one, you can put that in the fridge without unwrapping.

If not already wrapped, store the cauliflower in a plastic bag in the crisper drawer. Cauliflower can also be easily frozen once cut into florets.
