Choose a bulb of garlic that is heavy and firm with the papery skin fully intact. It is normal for some garlic varieties to have purple or red coloring on the skin.

Moisture and light are not good for storing garlic because they will cause mold to grow. Do not keep garlic in the refrigerator. Keep at room temperature in a dry dark place that allows for good air circulation like a basket or mesh bag.

When stored in the refrigerator or with too much moisture, garlic will begin to sprout in just a few days. Sprouted garlic is still edible, but sometimes it can be a little bitter-tasting.

Keep the garlic bulb fully intact until using. If kept whole, the garlic will keep in the right conditions for up to a few months. The lifespan of garlic will decrease once you break apart the individual cloves. A broken bulb will keep for just up to 10 days.
