How to Turn Kosher Salt Into Fancy Sea Salt
You can turn regular table salt into a nice kosher salt, and all it takes is a hot day and a little patience.
What you will need
1/2 lb Salt
2 lb Water

Combine the salt and water in a saucepan over high heat.

When the water comes to a simmer, give it a stir. Once the salt is all dissolved, remove from heat.

Pour the solution into a non-reactive container (metal containers will rust). Place in a warm, dry location. Weather permitting, in some regions you can set it in the sun for a day or two. Otherwise, use a pyrex baking dish and put the solution in your oven at its lowest temperature and crack the door opened slightly, but this can take 12 hours or longer. If you have a sous vide setup, float the container in a water bath at around 140°F for 12-24 hours.

When the solution is reduced to a salty sludge, strain off the remaining liquid. The salt will still be moist. Scatter the salt in a dry container and leave it out in the hot sun for another hour or two before storage.
