Irish Nachos
Considering the ingredient list, it'd be hard not to like this dish. Roasted rounds of potato topped with melted cheese, crispy bacon chunks, scallions and sour cream.
What you will need
2 lb Yukon Gold Potatoes
4 oz. Shredded Cheddar Cheese
4 oz. Bacon
1 bunch Green Onions
4 oz. Salsa
2 oz. Sour Cream

Preheat oven to 400°F

Wash the scallions and slice thin.

Slice the potatoes into thin rounds, less than 1/4" thick. A mandolin works great for maintaining consistency, but a sharp knife will work fine.

Arrange the potato rounds on a parchment or silicone-lined baking sheet. It's okay if they overlap slightly.

Leave a little room for the bacon slices.

Bake for 35 minutes. The bacon should be cooked crispy and the potatoes golden brown on the bottom and tender.

Arrange the roasted potato rounds evenly in the bottom of a heavy skillet.

Scatter the cheese over the top.

Bake for 10 minutes to melt the cheese.

Top with some salsa.

And a big dollop of sour cream.

Some sliced scallions.

And the crumbled bacon chunks.
