Leek & Potato Soup
What you will need
2 leeks
3 potatoes
1/2 onion
1 cup rice
Water
Broth
Salt and pepper to taste
How to cook

Sautée the onion (if non vegetarian, add diced bacon for an extra kick!)

Add the leek and potato

Add the rice and stir well

Cover with water (broth) and cook on high pressure for 12 minutes

Open the pot, stir well, season and serve!

You may add spring onions, olive oil and grated parm
