Lemon Clove Cookies
What you will need
1/2 lb Unsalted Butter
3/4 cup Sugar
1 tsp Vanilla
1/4 tsp Ground Cloves
1 Tbsp Lemon Zest
a pinch of Salt
1 Egg
2 cups AP Flour

Beat together 1/2 lb of softened butter and 3/4 cup sugar using an electric mixer. Beat until pale and fluffy. This should take 5 minutes at least, stopping several times to scrape down the edges of the bowl.

Add the vanilla extract.

Add the lemon zest to the mixer.

Add the ground clove.

Add a pinch of salt.

Mix in the egg.

Add the flour in batches, mixing between additions. Mix until the dough comes together in a ball.

Split the dough into two portions and roll tightly into cylinders of about 2" diameter. Wrap in plastic or parchment and seal tightly. Twist the plastic ends to smooth the cylinders.

Chill for at least 2 hours or overnight before baking.

Remove plastic wrap from dough and slice into rounds about 1/4" thick.

Preheat oven to 350°F

Arrange on a baking sheet with about 1/2" spacing. These cookies do not spread much as they bake.

Bake for about 8-12 minutes, or until very lightly browned.
