How to cook
Gather and portion ingredients.
Set oven to 425 °F
Lay the bacon and sweet potato fries out on a large sheet pan. You can always use two pans if it doesn't all fit on one.
Bake the fries and bacon for 20-25 minutes. Drain off the bacon grease after about 10 minutes. If the bacon gets too crispy before the sweet potato fries are finished just remove it from the pan.
Remove the bacon slices from the sheet pan. Drain any remaining bacon grease and arrange the sweet potato fries in a pile in the middle. Sprinkle them with the cheddar cheese. Put under the broiler for a few minutes until melted.
Finely chop the bacon.
Top with the chopped bacon and finely sliced green onions. Dollop with sour cream.
