There are so many delightful variations of matzo brei, a dish commonly eaten for breakfast during the Jewish holiday of passover. Pieces of unleavened bread, matzo, is soaked in scrambled egg, fried, and can be served with various toppings or inclusions like smoked salmon, mushrooms, or even cinnamon sugar.

What you will need

4 Tbsp Unsalted Butter

1 Onion

1/4 tsp Black Pepper

1/2 tsp Salt

6 Eggs

4 sheets Matzo

3 oz Smoked Salmon

4 oz Creme Fraiche, optional

Gather and portion ingredients.
