Mediterranean Stuffed Pasta Salad
This is the perfect way to have a portable pasta salad! This simple recipe is great for summer potlucks and gatherings.
What you will need
1 Slicing Tomato
1 English Cucumber
1 Red Onion
12 oz Jumbo Pasta Shells
1 bunch Spinach
6 oz Feta
1/3 cup Italian Dressing

Gather and portion ingredients. Cook pasta shells according to package instructions.

Peel and halve the onion keeping the root end in tact. Cut the onion in half and peel keeping the root end intact. Make a few cuts into the onion with the knife parallel to the cutting board.

Slice the onion across into strips and then dice.

Cut the tomato in half, remove the stem and dice.

Chop the spinach into strips.

Cut the ends off of the cucumber and slice into 3 or 4 planks. Cut the planks into matchsticks and then dice.

Toss all the chopped vegetables into a large mixing bowl. Add the feta and the salad dressing. Toss to combine.

Spoon the salad into the jumbo pasta shells.
