Orange Walnut Spinach Salad
A simple and nutritious salad that won't bore you to death. A great supplement to just about any meal.
What you will need
4 Mandarin Oranges
10 oz. Washed Spinach
Salt
Black Pepper
1/4 cup Olive Oil
1/4 cup Red Wine Vinegar
4 oz. Feta, optional
4 oz. Walnuts

Peel mandarins. Slicing away the peel will avoid leaving any pith behind, but watch your fingers. If you're not confident in your knife skills, just peel the mandarins as you would normally.

Tilt the mandarins on their side and slice thinly into rounds. You'll need a sharp knife for this. You might be able to get away with using a serrated knife. Again, if you're not confident here, just separate the peeled mandarin into segments and leave the pith on. It's good for you anyway.

Toss the washed spinach into a large mixing bowl.

Season lightly with a little salt and pepper.

Drizzle in the olive oil as you toss the spinach for even coating.

Add the vinegar. We're just making a lazy vinaigrette here. We don't need to be formal and whisk everything together. A little emulsification is nice, but this is just a quick salad that we're going to eat right away, so let's keep things simple.

Toss in the oranges.

top with feta crumbles if you so desire. This salad certainly doesn't require cheese, but if you like cheese, it's not gonna hurt.

Add the walnuts. Toss gently, as to avoid crushing the spinach.
