What you will need
1 envelope Unflavored Gelatin
2 Tbsp Water
2 cups Heavy Cream
1 cup Half and Half
1/3 cup Sugar
1 1/2 tsp Vanilla Extract
1/2 Vanilla Bean, Optional

Gather and portion all ingredients.

Add cold water to a small saucepan and sprinkle the gelatin over the top. Let sit for about 5 minutes until soaked in and solidified.

Cook the gelatin and water over medium heat until liquified and gelatin is dissolved. Remove from the heat and set aside.

In another medium sized saucepan, add heavy cream, half and half and sugar.

Bring the cream and sugar just up to a boil stirring constantly and then remove from the heat.

Once off the heat, stir in the dissolved gelatin and vanilla extract.

If you like, add the seeds of half a vanilla bean and steep the pod in the cream for a few minutes.

Dip the ramekins in water before filling them to create a light coating which will help the custard release once solidified. Fill the ramekins with the custard mixture.

Place the ramekins in the freezer for 15 minutes before moving them to the refrigerator for at least 4 hours. This will ensure that the custard sets up evenly.

Dip the outside of the ramekin into a bowl of hot water for a few seconds and run a knife carefully around the edge to release if from the bowl.
