Pork Milanese
If you're looking for pork dinner options, this is a great choice. Tenderized cutlets in a crust of parmesan and breadcrumbs.
What you will need
1 lb Boneless Pork Chops
2 Eggs
1 cup Panko
1/2 cup Grated Parmesan
Salt
Black Pepper
Olive Oil
2 Lemons

Portion the pork chops. They'll usually come a little thick, so try and slice them thinner, to around 1/2" thick.

Pound each cutlet thin with a meat mallet.

Crack the eggs into a dish and beat them with a fork until smooth.

Place panko in a small mixing bowl.

Add the grated parmesan and mix well.

Season each pork cutlet with salt and pepper.

Dunk each cutlet in egg and let it drain off a little.

Then coat each cutlet thoroughly with bread crumbs.

Heat up about 1/4" of oil in a heavy skillet over medium-high heat.

Once the oil is hot, and just beginning to smoke, gently place a cutlet in the pan. It should sizzle. Brown the cutlets gently, but thoroughly on both sides.

Slice up some lemon wedges to serve with your pork cutlets. Remove the tips of the lemon and then divide it into wedges. Slice off the point of each wedge and gently remove seeds.
