Quick and Easy Pickles
No Time To Wait.
What you will need
1 cup vinegar
1/2 cup water
1/4 cup sugar
4 nice pickling cucumbers
1/2 tsp chili flakes
1/2 tsp black peppercorns

Slice cucumbers to roughly 1/2" lengths. We want to eat these today, so we slice them to speed up the marination.

Combine vinegar, water, and sugar. Add peppercorns and chili flakes. Bring to a boil

Pack the cucumber slices tightly into a container. Pour the brine over the top to submerge.

Stick them in the fridge. I used another little container with water in it to keep them submerged.

You can eat them any time. Preferably after a few hours in the brine. Pickles tend to be about personal preference, so don't be afraid to experiment with different amounts, spices, and brine times.
