Rava Kesari/semolina Pudding

This is a quick and easy recipe. Again, South Indian๐. The recipe is very rich with ghee (clarified butter) cashews and sugar. I don't really know if this is nutritious. If you know, let me know๐
What you will need
1 measure semolina/ sooji
1.5 measures sugar (if you are a sweet tooth, add accordingly)
10 cashews - split and chopped into small pieces
Ghee - approximately 1.5 tablespoons
Cardamom - whole 3 OR powder 1/2 tsp
Saffron - a few stands OR orange food color - a pinch
water 1 3/4 cups
How to cook

Roast cashew nuts in 1/4 tsp of ghee. Keep aside.

Roast semolina in a tsp of ghee until light golden brown. Keep aside.

Set 1 3/4 cups of water to boil. When it starts to heat up, add the sugar and leave till sugar dissolves. Simmer.

Add in the roasted semolina and keep stirring constantly.

Make sure there are no lumps formed. Add in the saffron and cardamom (I forgot๐)

Add 1.5 tsp of ghee (dont forget stirring!)

After a couple of minutes it will start leaving sides and that is your cue to switch off the flame.

Decorate with cashews. Serve warm or cold.
