I've been working on my ribs for awhile. First step is the rub. You can store this stuff and use it for other stuff, but I like to make it fresh for every batch of ribs.

What you will need
2 tbsp sugar
1/4 tsp kashmiri chili
1 tsp salt
1/4 tsp ground cumin
1/2 tsp ground coriander
1 tsp allspice
1 tsp black peppercorns
How to cook
Go hunting for all of your spices.
When possible, it's a good idea to grind spices as you need them. In this case, I ground the allspice and pepper fresh.
Then just combine the spices and you're ready to roll.
This rub is intended as an overnight cure. Coat your ribs, rub the seasoning in, and then wrap the rack and let it chill in the fridge for at least 12 hours.
