Risotto Alla Milanese
What you will need
1 cup arborio rice
1/2 diced onion
2 tbsp butter
1/2 cup white wine
1 tsp saffron
3 cups broth (meat is the traditional, but chicken or vegetable works)
1/2 cup grated Parmesan cheese
How to cook

One a side pot, heat the broth

Sautée the onion with 1 tbsp of butter

Add the rice and stir well until the rice starts to get transparent

Add the wine and stir well

Cover the rice with the broth and stir well until the rice absorbs all the broth

Add more broth, the saffron and stir well until it's all absorbed. Repeat this for 20 minutes

Add 1 tbsp of butter, 1/2 cup of grated Parmesan cheese and serve
