Roasted Sunchokes
With anchovy hollandaise
Any time I see sunchokes at the market, gotta buy em. But what to do with them? I planned to roast whole, but Googled up a recipe with lemon and anchovy. Sounded like a win, but I wanted some texture, so I went for a hollandaise.
What you will need
1.5 lb sunchokes
1/4 cup olive oil
salt and pepper to taste
1 cup anchovy hollandaise
How to cook

Preheat oven to 400f.

Scrub the sunchokes and slice them in half.

Toss with oil, salt and pepper. Spread them out in a foil lined baking pan.

Whip up a batch of anchovy hollandaise sauce.

Roast sunchokes for about 40 minutes or so. Sunchokes should be a bit brown and soft all the way through.

Serve them up, doused with your hollandaise.
