Sausage & Pepper Sandwiches
This super easy meal comes together in just one pan and is super filling and delicious! Use whatever sausages are your favorite.
What you will need
Olive Oil
1 Onion
2 Red, Yellow, or Orange Bell Pepper
1 Green Bell Pepper
6 Italian Sausages
1/2 cup Red Wine
15 oz Crushed Tomatoes
6 Hot Dog Buns
Salt
Black Pepper
1/4 tsp Red Pepper Flakes, optional

Gather and portion ingredients.

Wash and chop the bell peppers in half. Remove the seeds and stem.

Slice the bell peppers into strips.

Peel and cut the onion in half. Slice against the grain into thin half-moons.

Smash the garlic with the flat side of the knife and remove the peel. Roughly chop.

In a large skillet over medium-high heat, brown the sausages on all sides. If they look like they may burst, make a shallow cut into the side to allow steam to escape. Remove the sausages from the pan and set aside.

In the same skillet, add a drizzle of olive oil and the sliced onions.

Season the onions with a generous pinch of salt and pepper. Saute for a few minutes until the onions soften.

Add the bell peppers to the skillet with the onions.

Add the chopped garlic and optional red pepper flakes to the skillet with the onions and peppers. Saute until the onions are translucent and the bell peppers are just starting to soften.

Add the red wine and stir to scrape off any browned bits off the bottom of the pan. Let the red wine simmer for a minute or two.

Add the crushed tomatoes to the pan, stir, and season to taste with additional salt and pepper.

Add the sausages back to the skillet to warm up in the tomato sauce.

Once the sausages are heated through, nestle into a bun and top with sauce, peppers and onions. Enjoy!
