This is a great weeknight meal that you can prep ahead of time and throw in the oven when you're ready! Try with your favorite barbecue sauce.
What you will need
1 lb Chicken Thighs
3/4 cup BBQ sauce
12 oz Green Beans
1 Sweet Potato
3 Tbsp Olive Oil
1 tsp Salt

How to cook
Gather and portion ingredients. Wash green beans and sweet potato.
Set oven to 375 °F
Cut the ends off of the sweet potato and then into even 1/4 inch planks. Stack the planks and cut into strips.
Cut the strips into cubes. Try to keep the cubes nice and small here otherwise they may take much longer to cook!
Add the green beans and sweet potato to a rimmed baking sheet. Drizzle with olive oil and season with salt and pepper.
Toss the veggies together until well coated in oil, salt, and pepper.
Place the chicken thighs on the sheet pan.
Brush both sides of the chicken generously with bbq sauce. Alternatively, toss the chicken thighs into a bowl with the sauce to fully coat before placing on the pan.
Bake at 375°F for 25-30 minutes, flipping the chicken and stirring the vegetables halfway through. Depending on the size of your chicken thighs and sweet potato chunks, cook time may take a little longer. Test the internal temp, which should hit 165°F when chicken is done.
Top with a little extra sauce if you like! Portion and serve.
