This is a great weeknight meal that you can prep ahead of time and throw in the oven when you're ready! Try with your favorite barbecue sauce.
What you will need
1 lb Chicken Thighs
3/4 cup BBQ sauce
12 oz Green Beans
1 Sweet Potato
3/4 tsp Salt
1/2 tsp Black Pepper

Gather and portion ingredients. Wash green beans.

Set oven to 400 Β°F

Cut the ends off of the sweet potato and slice into 1/4 to 1/2 inch planks. Then slice into matchsticks.

Chop the matchsticks into cubes being sure to keep them smaller than 1/2 inch and ideally closer to 1/4 inch in size so they cook evenly in the oven.

Trim the ends off of the green beans and add to a rimmed sheet pan with the cubed sweet potato. Drizzle generously with olive oil and sprinkle with the salt and pepper.

Stir with tongs or your hands to thoroughly coat all the vegetables with the olive oil and seasonings.

Place the chicken thighs on top of the vegetables leaving space between them.

Brush or spoon bbq sauce on both sides of the chicken thighs.

Bake in the oven for about 30 minutes stirring halfway through. The time will vary depending on the size of your cubed sweet potato and thickness of your chicken. If necessary, pull the green beans off the pan and continue cooking until chicken reaches 165Β°F internal temperaature and the sweet potatoes are softened.

Add more bbq sauce as you like and serve!
