Sheet Pan Kielbasa & White Beans
Throw this delicious meal together in just a few minutes and let the oven do the work. Serve with some crusty bread alongside to soak up all the sauce! Save the leftovers since this one heats up well for lunch the next day.
What you will need
1 Kielbasa
1 Onion
2 Zucchini
15 oz can White Beans
1/2 tsp Salt
1/4 tsp Black Pepper
1 clove Garlic
1 Tbsp Olive Oil
14.5 oz Crushed Tomatoes
1 Tbsp Italian Seasoning

Gather and portion ingredients. Drain and rinse white beans.

Set oven to 400°F

Cut the ends off of the zucchini and then cut into quarters lengthwise. Chop into 1/2 inch pieces.

Cut the onion in half and peel keeping the root end intact. Make two cuts into the onion with the knife parallel to the cutting board. Then slice into strips and dice.

Smash, peel, and roughly chop the garlic cloves.

Slice the kielbasa at an angle into 1/4 inch thick slices.

Add the chopped onion, zucchini, garlic, and drained white beans to a rimmed baking sheet.

Drizzle the veggies with olive oil and season with the salt, pepper, and Italian seasonings. Stir to combine, and spread out on the pan.

Add the sliced sausage and crushed tomatoes to the pan. Mix to distribute the tomato.

Bake for 25 minutes or until zucchini is tender and onion is translucent.
