Simple Bolognese
What you will need
2 Carrots
1 Onion
3 oz. Bacon
3 Tbsp Butter
1 lb ground Pork
3 oz. Tomato Paste
1 cup Milk

Peel the carrots. Remove the tips. Grate them on the medium side of a box grater (the same side you would normally use for cheese).

Peel onion and slice in half through the stem tip. Slice away the face and then slice a hatch pattern into the face without splitting the onion. Then you can easily dice.

Cut the bacon into strips, around 1/4" wide.

With all of your ingredients prepared, let's move on to the fun part.

Melt the butter in a heavy sauce pot over medium-low heat.

Stir in the diced onion.

Stir in the grated carrot.

Cook gently, stirring often until diced onion and grated carrot are both tender.

Add the diced bacon. Continue cooking to render the bacon.

When the bacon is mostly cooked through, add the pork. Stir to break it apart. Continue cooking until pork is browned.

Stir in the tomato paste and continue cooking, stirring frequently, until the tomato paste thickens.

Add 1 cup of milk.
