A simple red wine vinaigrette with fresh oregano and shallot.

What you will need

1 tsp chopped fresh Oregano

1 Tbsp minced Shallot

2 Tbsp Red Wine Vinegar

1/2 cup Olive Oil

Salt and Pepper to taste

Cut the shallot to a fine brunoise.

How to Brunoise a Shallot

Back in maybe 2006, I staged for 1 night at this place called Chef Mavro's. It's still one of the best restaurants in Hawaii. What I remember most about that night is being shown how to brunoise a shallot.

Pick the leaves from about 3 sprigs of fresh oregano.

Group the oregano leaves together and chop.

Pour about 2 Tbsp worth of red wine vinegar in a mixing bowl.

Add the chopped Oregano.

ften and the flavors will mingle.

Add the minced shallot. Let this sit for awhile so that the shallot will soften and the flavors will mingle.

In a thin stream, whisk in the olive oil. Season with salt and pepper.
