Sliced Sweet and Sour Onions
Caramelized onion slices
Surprisingly not too sweet, yet sweet enough add an extra flavour to pork or wild fowl
What you will need
2 medium yellow onions, sliced finely to make rings
cane sugar or molasses, 3/4 shot glass, more or less
vegetable oil, preferably sunflower seed or similar, about 3 tblsp
apple cider vinegar OR cognac OR whiskey, half a shot glass, more or less
maybe some water
How to cook
1

Cover, just barely, the bottom of a skillet, put the onion slices on this, mix well, separating the rings
2

Add almost a shot glass of brown sugar, best if integral. Better still, molasses. Add half a shot glass of apple cider vinegar, or cognac, or whiskey
3

Heat to low simmer, mixing well. Cover. Let simmer at least 5 minutes before opening
4

Stir every now and then, until liquid is gone. For mushier onions, add water, and keep stirring until the consistency desired. Otherwise, brown very lightly.
5

Serve with pork roast or wild fowl for best results.
