Load up your grilled cheese with these fantastic Spanakopita inspired flavors. One tip, swap the bread for a pita.
What you will need
8 slices Bread
8 oz Artichoke Hearts
1 bunch Spinach
6 oz Feta
8 oz Fresh Mozzarella
1/4 Red Onion
Olive Oil

Gather and portion ingredients.

Thinly slice a quarter of a red onion. Then slice the mozzarella.

Add the mozzarella, red onion and a few articchoke hearts to a slice of your favorite bread.

Add a few leaves of spinach and a couple crumbles of feta.

Place the sandwich on a skillet with a bit of olive oil over medium heat. Top with a lid

Flip the sandwich and grill for a few more minutes until the bread is golden brown and cheese is melty.
