Spinach Salad with Fig and Blue Cheese
What you will need
1 Tbsp Balsamic Vinegar
¼ cup Olive Oil
5 oz. Washed Spinach
3 sprigs Fresh Thyme.
4 oz. Figs
1 oz. Blue Cheese
1/4 cup Pine Nuts(Nutritional facts 162 calories, 13.18 g fat, 9.18 g carbohydrates, 4.03 g protein, 9 mg cholesterol, 1289 mg sodium)
How to cook
Place the balsamic vinegar in a large mixing bowl.
Whisk in the olive oil in a thin stream.
Add the Spinach.
Add the picked thyme.
Add a little salt and black pepper to taste. Toss gently to coat the spinach in vinaigrette.
Cut off the fig stems and then slice the figs into wedges.
When you're ready to serve, layer the greens neatly in a large salad bowl. Crumble some blue cheese on top.
Add a sprinkle of pine nuts.
And add the figs.
