Squash Risotto
What you will need
1 lb Arborio rice
2 tbsp of butter
1/2 diced onion
2 cups of diced squash
1 cup of white wine
5 cups of broth (any kind)
1 cup of grated Parmesan cheese
How to cook

Sautée de onion with 1 tbsp of butter

Add the squash and sautée a little

Add the rice, mix well and sautée for about 3 minutes

Add the wine and stir well

Add 1 laddle of broth and mix well. Re-add broth as the water starts to dry.

Cook for 20 minutes, re-adding broth as the water dries

Add the other tbsp of butter and mix well

Add the grated Parmesan, switch of the stove and serve!
