3 Corn on the Cob

2 cups Milk

Sea Salt

1 tablespoon Sugar

1 cup Grits

Fresh Black pepper

2 tablespoons Unsalted Butter

1½ cups grated white cheddar cheese

Put the corn cobs, 1 quart water, the milk, 1/2 teaspoon salt, and the sugar in a large saucepan and simmer until the liquid is flavorful, about 20 minutes. Strain 4 cups into a medium heavy-bottomed Dutch oven, put over high heat, and run laps till it boils.

Whisk in the grits and turn down to a simmer. Simmer until thick, about 30 minutes, stirring about every 5 minutes. Stir in the pepper, butter, and cheese. Add more salt if you think it needs it. Eat ’em quick before they lose their heat.
