The Greatest Broccoli in the World (tribute)
Lordy Lordy
I couldn't remember the greatest broccoli in the world. This is just a tribute. Broccoli tossed in an impromptu romesco sauce.
What you will need
8 oz roasted red peppers
1 tbsp almond butter
1 tbsp balsamic vinegar
2 heads of broccoli
How to cook
1
Combine peppers, almond butter and vinegar in a blender and puree. Taste it and make some adjustments. All three of these ingredients can vary greatly in flavor, so you'll need to excercise your own chefly instincts. Make it taste good.
2
Cut up the broccoli. I usually remove the florets and break them up to the size of a small kiwi more or less. I always peel and slice the stem as well. Broccoli stem is delicious.
3
Prepare a steamer basket. Place your broccoli in the steamer and steam for about 3 minutes. You don't want it all soft, just warmed through really, with some snap left in there.
4
Toss with your sauce and serve.
