Tortellini Soup
Fresh tortellini absorbs all the flavor of the broth for a super satisfying scoop of soup!

1 Onion
1 Tbsp Olive Oil
3 oz Pancetta
4 cups Chicken Broth
9 oz Tortellini
8 oz Spinach
1/2 cup Grated Parmesan
Salt

Gather and portion ingredients.

Peel and cut the onion in half. Slice into strips and dice.

Add oil to soup pot over medium-high heat. Begin cooking the onion stirring occasionally.

Add the pancetta and cook until it starts to crisp up.

Add chicken broth, add a lid and bring to a boil.

Once boiling, add the tortellini and boil until cooked.

Add fresh spinach and stir until incorporated.

Serve and top with parmesan.
