Tostones
Fried Green Plantains
These delicious fried green plantains are found commonly in Latin American and Carribean cuisine. Top generously with flaky salt and serve alonside your main dish, with beans, or a sauce of your choice!

Gather ingredients. You will need very unripe and fully green-skinned plantains for this recipe.

Start heating up oil
Heat vegetable oil in a heavy bottomed skillet. Fill the oil about 1 inch in the pan. Bring to 350 °F.

Cut a slit down the side of the plantain and remove the peel.

Cut the plantains into slightly longer than one inch rounds.

Once the oil heats to 350 °F, add the sliced plantains to the oil.

Flip the plantains after a few minutes and fry on the other side, about 6-8 minutes total.

Remove the plantains from the oil and let drain on a paper towel.

On a hard surface, use the bottom of a bowl or glass to squish the plantain until it is about 1/4 inch thick. Don't press them so much that they break apart.

Add the squished plantains back to the oil and fry for a few minutes on each side or until crispy on the outside.

When lightly browned and crispy, drain the tostones on a paper towel. You will probably need to do two rounds of frying as to not overcrowd the pan.
