Zoodle Pad Thai Meal Prep
What you will need
INGREDIENTS
1 tbsp coconut oil
1 yellow onion
4 chicken breasts or 6 tenderloins
3 - 4 zucchinis, spiralized
4 - 5 carrots, cut into matchsticks
1/2 red cabbage, thinly chopped
3 scallions, sliced
1/4 cup chopped peanuts
(any extra veggies, optional)
handful of spaghetti, cooked (optional)
SAUCE
1/4 cup tamarind paste
1 tbsp soy sauce
1 tbsp peanut butter
2 cloves garlic, minced
2 tsp fish sauce
2 tsp lime juice
(or prepared pad thai sauce)
How to cook

Prep all veggies, mix the sauce, cut chicken into large bite size pieces & salt and pepper, cook spaghetti if using

Heat oil on med-high, add onions. Sautee for 2-3 minutes until softened.

Add half of the carrots and the chicken, and 3/4 of the sauce. Stir to combine, cook for 8-10 minutes until chicken fully cooked. At ~ 5 minutes left, add the rest of the carrots and most of the cabbage.

Remove from heat and stir in zoodles and noodles, sauteeing 30 sec with remaining sauce

Add scallions and peanuts. Refrigerate up to 5 days
