Zucchini, Mushroom and Miso Risotto

Whenever I'm not sure of what to cook, I end up making a risotto... grab whatever veggies you have available, add broth and arborio rice!

What you will need

1/2 cup onion, chopped

5 cups chicken broth

1 cup grated Parmesan cheese

1 cup mushroom, chopped

1 tbsp miso

1 cup white wine

Salt & pepper to taste

200 gr arborio rice

3 cups zucchini, chopped

How to cook


Sautée de the onion in olive oil


Add the rice and stir well for about 1 minute, until the rice start getting transparent


Add the mushroom and stir well


Add the wine and stir well

Add the wine and stir well


Cover the rice with the chicken broth and add the zucchini


Keep stirring and covering the rice with the chicken broth every time the liquid dries out


It usually takes about 20 minutes of stirring and re-adding broth to fully cook the risoto.


Once the rice is cooked add the miso, the grated Parmesan and stir well. Salt & pepper, and serve!
