This is a fun sweet and savory salad with chicken apple sausage to add some protein and make it a full meal! I even used cinnamon raisin bread to create crunchy croutons.
What you will need
12 oz. cooked Chicken Apple Sausage
2 Bartlett Pears
4 slices Cinnamon-Raisin Bread
1/2 cup dried Sweet Cherries
10 oz. Spring Mix Greens
1/2 cup chopped Walnuts
Dressing:
3 Tbsp Apple Cider Vinegar
1/3 cup Olive Oil
pinch Salt
1/2 tsp Ground Cinnamon
2 tsp Honey

Gather all ingredients.

Portion all ingredients.

Set oven to 375°F

Sice the sausage into thin rounds.

Cut around the core of the pear in order to remove the stem and seeds.

Slice pears into thin strips. You can also cube them if you prefer that.

Cut the slices of bread into 1 inch cubes and spread out on a baking sheet.

Place the bread cubes and walnut pieces into the oven set at 375°F in order to toast the walnuts and croutons. Bake the walnuts for about 5 minutes or until fragrant, and the croutons for about 8-10 minutes stirring halfway through.

Heat a pan to medium high heat and cook sausages for about 2-3 minutes per side.

Once the walnuts are toasted remove them from the oven. Stir the croutons and put them back into the oven for 3-5 more minutes or until brown and crispy.

Add olive oil, apple cider vinegar, pepper and cinnimon to a small bowl.

Add honey and mix.

Toss the dressing in with the mixed greens.

Portion the dressed mixed greens into 6 bowls and top with pears, cherries, toasted walnuts, and browned chicken apple sausage.
