Microwave Baked Potatoes
The answer to that search for a low effort starchy side dish. If you don't eat the skin, the difference between a microwaved potato and a baked potato is not noticeable and prep time is slashed.
What you will need
2 lb Russett Potatoes
Shredded Cheese, optional
Sour Cream, optional
1 bunch Chives, optional
Bacon Bits, optional

Pierce the potatoes randomly with a fork to break the skin.

Microwave on high for about 10 minutes, or until potatoes are tender through, and easily pierced to the center with a skewer or a thin knife.

Now you can simply slice a lengthwise opening in the top of your potatoes and serve with toppings. I like to add a little butter and scrape the potato from the sides with a fork, folding in the butter.

Add any toppings you like: sour cream, bacon bits, sliced chives or scallions.
