Pulled Pork Sandwiches with Coleslaw
This is a family favorite and can be quickly prepared on weeknights. If you are feeling adventurous, try making pulled pork from scratch!
What you will need
COLESLAW
8 oz Cabbage
1 Carrot
1 Tbsp Apple Cider Vinegar
1 tsp Salt
1/4 tsp Ground Black Pepper
1/2 cup Mayonnaise
1 Tbsp Dijon Mustard
1/2 Tbsp Sugar
FOR SERVING
4 Burger buns

Gather and portion all ingredients.

Start by making the coleslaw. Keeping the stem side intact, cut the cabbage into 3 or 4 sections and slice into thin shreds.

Wash and grate the carrots and put into the bowl with the cabbage.

Add the apple cider vinegar, salt, and pepper to the bowl with the cabbage and carrots.

Add the mayonnaise, dijon mustard, and sugar to the bowl as well.

Stir until the dressing is well incorporated.

Spread a thin layer of mayonaise on each bun half and place face down onto a pan on medium heat for about 3 minutes or until lightly browned and warmed through.
