8 oz Mascarpone
1 cup Sugar
7 oz Ladyfinger Biscuits
1/4 cup Cocoa Powder

Gather and portion all ingredients.

Separate egg yolks from the whites.

Whip the eggwhites to stiff peaks using a stand mixer or hand mixer.

In a seperate bowl, beat the sugar and egg yolks together until fluffy.

Mix the mascarpone cheese into the egg yolks and sugar.

Fold the whipped eggwhites into the mascarpone, sugar, and egg yolk mixture.
Assemble the tiramisu

Dip the ladyfingers into the brewed coffee and lay one layer into the bottom of a 9x7 or 8x8 baking dish. I used an 11-cup glass Pyrex dish.

Top the soaked ladyfingers with half of the mascarpone mixture and gently smooth the top with a spatula.

Sift a thin layer of cocoa powder over the mascarpone mixture.

Dip another layer of ladyfingers in the coffee and carefully lay them on top of the cocoa powder.

Add the remaining mascarpone mixture to the top of the ladyfingers. Smooth the top with a spatula.

Sift another thin layer of cocoa powder to the top of your tiramisu. Refrigerate for at least one hour before serving.
