White Bean Stew
This soup is about as easy to make as opening a can and it'll go a lot further than any canned soup. Soothing and packed with Broccoli Raab. The perfect meal for when you want to eat healthy but you don't have the energy.
What you will need
4 cloves Garlic
1 bunch Broccoli Rabe
ΒΌ cup Olive Oil
1 tsp Chili Flakes
1 tsp Ground Coriander
1 tsp Ground Cumin
4 cups Chicken Broth
30 oz. canned White Beans
Salt

Wash the broccoli raab, remove and discard any tough or discolored portion of the stem. Chop the broccoli up into bite-sized chunks.

Heat the olive oil over medium heat in a soup pot.

Stir in the crushed garlic.

Add the chili flakes.

Add the ground coriander.

Add the ground cumin. Stir briefly. Toasting in oil will intensify the flavors of the spices and chili flakes.

Pour in the chicken broth as soon as you can smell the toasted spices. Increase the heat to high in order to bring the broth to a boil.

Add the white beans.

When the broth begins to boil, add the chopped broccoli raab. The broccoli will cook very quickly.

Season with salt and pepper, and serve.
