Beets are so delicious but can be a pain to prepare. Use these pre-packaged beets to cut down on time and have beets whenever you want! Feta and white balsamic vinegar is absolutely fantastic with beets. You have to try this salad!
What you will need
5 oz spring greens
2 oz sliced almonds
6 oz crumbled feta
15 oz roasted beets
4 teaspoon olive oil
2 teaspoon white balsamic vinegar
1 teaspoon dijon mustard
1 teaspoon honey
pinch of salt

How to cook
Gather your ingredients.
Olive oil, vinegar, black pepper and salt.
Honey and dijon mustard. Mix the dressing well until combined.
Chop the beets. I usually buy pre-cooked beets to be able to make this in under 5 minutes. You can also roast your own fresh beets and peel off the skin and use here as well.
Portion the lettuce between two bowls and add the beets, the feta cheese and the almonds.
Drizzle with the honey and dijon dressing.
