Also known as Peanut Butter Buckeyes, these chocolate covered peanut butter truffles are to die for!!! Just like a homemade Reese's Peanut Butter Cup.
What you will need
¾ cup creamy peanut butter
¼ cup (57g) unsalted butter, softened
½ teaspoon pure vanilla extract
¼ teaspoon salt
1¾ cup powdered sugar

How to cook
Gather and portion ingredients.
Add creamy peanut butter, melted butter, powdered sugar, and vanilla to a mixing bowl.
Mix all the ingredients together with a spatula until well combined. Feel free to use your hands if it is easier!
Use your hands to form tablespoon sized balls of the peanut butter mixture.
Use a skewer or toothpick to hold the peanut butter balls while you dip into the chocolate. Leave the top uncovered and place on a piece of parchment paper while the chocolate cools.

This will show you how to set up a double boiler, perfect for melting chocolate and making hollandaise, custard, and more! You do not need any special equipment for this technique, just a bowl that fits on top of a pot. The bowl just needs to fit on top of the pot without sinking in and touching the water inside.
Continue dipping the peanut butter balls until all are coated. Warm chocolate over the double boiler if it cools too much to dip.
Chill in the refrigerator for 10 minutes and then they are ready to serve!
