How to Store Roma Tomatoes
Roma is one of the most common tomato varietals. Here are some tips for storing them for both long and short term.

It all depends on when you plan to use your tomatoes.

In general, fresh tomatoes should be stored in a cool, dry place, but not below 55°F. Storing tomatoes at low temperatures can give them a mealy texture and hinder proper flavor development.

If possible, separate them into a single layer so that you get plenty of airflow and reduce the likelihood of mold growth. Storing on top of a sheet of parchment or some paper towels can help your tomatoes stay dry.

If you just have way too many tomatoes and you know you won't get to them before they go bad, you have several options. The easiest solution is to seal them in an airtight container with a label and toss them in the freezer. Frozen tomatoes will last for about 3 months, but they're only really good when cooked.

You can also dry them out in a dehydrator or an oven. Slice them in half, scoop out the pulp and toss in olive oil, salt and pepper. Then roast on parchment at your oven's lowest temperature for 4-8 hours or until dry.

Canning will get you the longest storage period. Acidic foods can be be stored safely for about 18 months when properly canned. But canning is certainly the most complicated solution and will require special tools.
