Loaded Cauliflower Casserole
This healthier version of a loaded baked potato is crowd pleasing side-dish, perfect for any meal! There is plenty to love about this dish with smoky bacon, lots of cheese and sour cream.
What you will need
6 slices Bacon
2 heads Cauliflower
1/2 bunch Green Onions
6 ounces Cream Cheese
2 cups Shredded Cheddar Cheese
1/2 tsp Salt
1/2 tsp Black Pepper
2/3 cup Sour Cream

Gather and portion all ingredients.

Set oven to 425 Β°F

Use kitchen shears to easily slice bacon into thin strips.

Heat a skillet over medium heat and add the bacon. Stir every few minutes while you prepare the other ingredients.

Slice the head of cauliflower in half and cut out the stem.

Cut the cauliflower halves into bite sized florets.

Cut off the roots of the green onions and thinly slice.

Put the cream cheese and shredded cheddar into a bowl together.

Use a spatula to work the cream cheese and cheddar together. Mix until well combined.

Cook the bacon until crispy, and pour about 1 tablespoon of the bacon fat over the cauliflower. Stir to coat.

Place cooked bacon on a paper towel to drain.

Sprinkle the salt and pepper over the cauliflower and stir to combine.

Bake the seasoned cauliflower for 30 minutes, stirring halfway through.

Dollop tablespoonfulls of the cream cheese cheddar mixture over the top of the cauliflower until you use it all.

Bake the cauliflower again for 5-7 minutes or until cheese is melted and bubbly.

Once out of the oven, top the cauliflower with the crispy bacon, green onions, and dollops of sour cream!
