Air Fryer Satay Chicken Drumsticks
Chicken drumsticks cook so well in the air fryer and get super crispy! I love this Thai satay marinade paired with it as well. These are easily prepped ahead of time and left to marinate for a few hours or even overnight.
What you will need
2 lbs Chicken Drumsticks
1 stalk Lemongrass, optional
1 Lime
3 Tbsp Brown Sugar
2 Tbsp Curry Powder
3 Tbsp Soy Sauce
1 1/2 Tbsp Vegetable Oil
Salt

Gather and portion ingredients.

Bruise the lemongrass with the back of a knife and cut the stalk in half lenghtwise.
Marinate chicken

Season chicken with a few pinches of salt and add to a gallon ziplock bag or covered container. Add the lemongrass stalk to the bag with the chicken.

Squeeze the juice of one lime over the chicken.

Add the brown sugar and soy sauce to the chicken.

Pour in the oil and curry powder.

Seal the bag and mix the marinade to combine all the ingredients. Refrigerate marinate at least 30 minutes up to overnight.

Preheat air fryer to 390°F
Set the air fryer to 390°F and run for about 5 minutes to bring it up to temp.

Lay the drumsticks in the air fryer basket and fry for 5 minutes at 390°F.

Flip to the other side and fry for another 3-5 minutes or until the internal temperature reaches 165 °F and the outside is crispy.
