Hawaiian Spam Fried Rice
Bring Hawaiian flavors to the fried rice party and create a filling sweet and savory meal. If you like a little spice, free to drizzle with some sriracha or add chili flakes! I also like to garnish with some roasted seaweed.
What you will need
1 bunch Green Onion
1 Red Bell Pepper
1 Tbsp Vegetable Oil
1 can Spam
4 oz Pineapple tidbits
1/3 cup Teriyaki Sauce
2 Eggs
16 oz precooked Rice

Gather and portion ingredients

Chop the bell pepper in half and remove the stem and seeds. Slice into thin strips and then turn and dice.

Chop the spam into small cubes.

Heat the oil in a skillet over medium-high heat. Add the cubed spam.

Let the spam sit for a few minutes each time before stirring to let it brown and get a little crispy.

Once the spam is a little crispy, add the rice. It's ok if the pan is pretty hot because we want the rice to brown up and crisp a bit as well.

Add the bell pepper and half of the green onion. Stir to incorporate and cook for 2-3 minutes.

Add the teriyaki sauce and pineapple. You can add the pineapple juice from the can here also.

Scoot the rice to one side to make room to cook the eggs directly on the pan. Scramble the eggs and pour in and cook and stir until scrambled. Then mix to incorporate into the rice.

Get creative and serve in a pineapple bowl! Top with remaining green onion, seaweed, sriracha, sesame seeds or any of your other favorite toppings.
