Southwest Chop Salad
Whip up your own cilantro dressing for this fresh salad. Feel free to add some meat or cheese to turn it into a taco salad!
What you will need
INGREDIENTS
1 head Romaine Lettuce
15 oz can Black Beans
1 1/2 cup Grape Tomatoes
1 cup Frozen Corn Kernels
1 Avocado
1 cup grated Cheddar Cheese (optional)
CILANTRO DRESSING
1/2 bunch Cilantro
1 Lime
1 clove Garlic
1 tsp Honey
1/2 cup Olive Oil
pinch Ground Black Pepper
pinch Salt

Gather all ingredients.

To make the dressing, remove the cilantro leaves from the stem and give it a rough chop. If you have a food processor, this is a great way to make your dressing. For this method, add all the ingredients except the olive oil, and with the motor running, add olive oil in a slow, steady stream and blend until smooth.

Crush and dice the garlic.

Add the juice from one lime, salt, pepper, and honey to a bowl with the cilantro.

Slowly pour in the olive oil while whisking to incorporate the oil into the dressing.

Chop the romaine lettuce into thin, bite sized strips and portion between the bowls, or into one large salad bowl.

Top the chopped romaine with black beans, corn, and tomatoes.

Add the chopped red onion and slice the avocado into thin strips.

Use a spoon to remove the avocado from the skin and lay it across the top of the salad. Top the salad with your homemade cilantro lime vinaigrette
