This is a super easy meal to whip up for lunch or dinner. Elevate the chicken with lots of spices and the addition of salsa.
What you will need
1 tsp ground Cumin
3 tsp Chili Powder
1 tsp Black Pepper
1/4 tsp Salt
1 lb Boneless Skinless Chicken Breasts
2 tsp Canola Oil
1 can Black Beans
1 cup Frozen Corn
1 cup Salsa

How to cook
Gather and portion all ingredients. Drain and rinse the black beans.
Clean off any excess fat on the chicken and then slice it in half horizontally.
Mix the seasonings together.
Rub both sides of the chicken with the seasonings.
Add the oil to a pan and warm to medium heat. Cook for a for about 3-4 minutes on each side.
Add the drained black beans and corn to the pan with the chicken and pour the salsa over.
Stir the salsa in with the corn and the beans and flip the chicken again. Ready to eat once the beans and corn are warmed through.
Slice chicken, warm up the rice and serve !
