Creamy Spinach Tortellini
This is a super easy recipe to make with simple ingredients that will fill you up and even includes a little greens in there.
What you will need
20 oz. Cheese Tortellini
8 oz. Cream Cheese
1 1/2 cup Vegetable Broth
5 oz. Washed Spinach
1 cup shredded Mozzarella Cheese

Portion ingredients.

Set oven to 400°F

Add the broth and cream cheese to a heated oven-safe skillet.

Bring to a simmer over medium-high heat and stir the cream cheese into the broth until fully melted and incorporated and thickened. If it looks separated or chunky just keep stirring!

Follow package instructions to cook the pasta in salted water and drain when ready.

Mix the spinach into the cream cheese sauce until it wilts down and reduces a bit.

Stir the tortellini into the pan with sauce and spinach until coated.

Top the skillet with the shredded mozzarella and place in the oven to bake for 10 minutes or until the cheese is melted and browned a bit.
